Anyone else already excited about Thanksgiving leftovers?!?
Typically I’m not a fan of copious amounts of uneaten dinner food sitting the fridge–I’d rather not eat the same thing over and over again, and good food going to waste is not ok.
But leftover juicy roasted turkey is another story. I’m all about variety, and the possibilities with turkey are ENDLESS. Bring on the sandwiches, salads, soups, pizzas, and pretty much any turkey + grain + cheese + veggie bake.
I used deli turkey for this sandwich, but as you might guess roasted turkey would be excellent as well. It’s all about the delicious flavor and texture combo, and of course the wholesome and satisfying ingredients.
With a side of The Good Bean Sea Salt roasted chickpeas for a lunch o’ power.
