Extra Fudgy M&M Cocoa Brownies

The extra fudgy, extra chocolatey, sweet yet dark and rich brownies of your dreams made with pure cocoa, butter, and Kahlúa. Baked with M&Ms for a melt-in-your-mouth texture combo that’s out of this world.

I have the richest, dark and fudgiest, very best extra chocolatey brownies to share with you. They happen to make the perfect Spring/Easter season indulgence thanks to pretty pastel chocolate candies. But TAKE NOTE: Every season is chocolate season. Thus, brownies are appropriate any day of the year. This is important; write it down.

This is my new go-to brownie recipe for every occasion. They are ultra scrumptious on their own and do not need any toppings or mix-ins; at the same time, I can’t help but recommend them as the ultimate chocolate-lover’s canvas for creativity:

  • Chocolate Candy: Bake topped with M&Ms, mini peanut butter cups, or another seasonal chocolate candy.
  • Nostalgic Cosmic: After cooling, cover with chocolate ganache and sprinkles; refrigerate until set.
  • S’mores: Top with broken Hershey’s squares and graham crackers before baking. At the end of cooking, add mini marshmallows on top and broil until golden. 
  • Cookies and Cream: Fold white chocolate chips into the batter and sprinkle crushed Oreos on top before baking. Alternatively, after cooling, top with cream cheese frosting and crushed Oreos. 
  • Biscoff: Before baking, swirl melted cookie butter over the batter in the pan and sprinkle chopped Biscoff cookies on top.
  • Turtle: Fold chopped pecans and chocolate chips into the batter before baking. After baking and cooling, drizzle with warm salted caramel, and finish with additional pecans and chocolate chips.
  • Sweet and Salty Butterscotch: Top with broken pretzels and chocolate chips before baking. After cooling, melt 1/3 cup butterscotch chips, add to a baggy with a snipped corner, and drizzle over brownies.

Extra Fudgy M&M Cocoa Brownies

Notes

Ingredients

  • 10 Tbsp unsalted butter
  • 1 cup granulated sugar
  • 1/3 cup packed light brown sugar
  • 1 Tbsp honey or corn syrup
  • 3/4 cup + 2 Tbsp (88g) unsweetened cocoa powder (I love Ghirardelli)
  • 1/2 tsp vanilla extract
  • 1 Tbsp Kahlúa (coffee and rum liqueur), optional
  • 2 large eggs + 1 egg yolk
  • 2/3 cup (85g) whole wheat pastry or all-purpose flour
  • 1 Tbsp cornstarch
  • 1/4 tsp fine sea salt
  • 1/2 - 3/4 cup seasonal M&Ms (see post above for variations)

Instructions

  1. Preheat oven to 350ºF. Line an 8x8 inch nonstick metal brownie pan with parchment paper (making sure it goes up all sides for easiest removal).
  2. Place the butter in a microwave-safe measuring cup (or your large mixing bowl if microwave-safe). Microwave about 90 seconds to melt. Transfer to a large mixing bowl.
  3. Mix granulated sugar, brown sugar, honey/corn syrup, and cocoa with the melted butter until thoroughly combined. Make sure the mixture is close to room temperature before adding remaining ingredients.
  4. Stir in vanilla, Kahlúa, then eggs and yolk one at a time. Stir well, until uniformly mixed.
  5. Add the flour, cornstarch, and salt. Stir until just combined.
  6. Pour batter into the prepared pan and spread out evenly. Sprinkle M&Ms over the top (as many as you like). Bake about 25 minutes, or until just set in the center. A toothpick inserted into the center should come out with moist _crumbs_ (wet batter means underdone, completely clean means too long).
  7. Cool completely in the pan to room temperature before slicing.
  8. Lift parchment paper to remove uncut brownies from the pan. For a clean cut, first heat the knife in hot water then wipe dry, or grease the knife. Slice into 16 small or 9 large brownies.
  9. Store in an air-tight container at room temperature for up to a few days, refrigerated, or frozen for up to 2 months.
