The Best Veggie Bagel Sandwich

The VERY BEST texture and flavor in a healthy, satisfying veggie bagel sandwich. Roasted red pepper hummus, feta, crunchy veggies, creamy avocado, olives and sun-dried tomatoes, herbs, spinach, and Everything seasoning on a chewy toasted multi-grain bagel.

That’s it. It’s been done. THE BEST veggie bagel sandwich is here, and the flavors and textures are out of this world. We’ve got creamy hummus and avocado, rich and crumbly feta, crunchy veggies, and a chewy toasty bagel, PLUS the tasty medley of sun-dried tomato, olive and pickled peppers, herbs, and the new sensation, Trader Joe’s Everything but the Bagel Seasoning. 

Also, coming from a meat-eater, I can honestly say that this sandwich is as filling and satisfying as any. Perfect for an easy lunch or for packing in your lunchbox and getting stares from all your co-workers.

The combo is very customizable based on your tastes and what you have on hand:

  • Sub any hummus or bean spread for the roasted red pepper hummus.
  • Try mint, dill, or parsley in place of the basil.
  • Cucumbers, matchstick carrots, other types of peppers, and sprouts would work well! 
  • For the olives, I have a firm belief that there is an olive out there for everyone, even if you’re an olive hater until you find the one you’re destined to love. But, if you must, leave out the olive and focus on some yummy pickled peppers or onions.
  • Serve it on your favorite hearty bread. I’m using a Rudi’s multi-grain bagel, thinned with a bread knife, and lightly toasted. LOVE the toasty and chewy texture!

Served it here with Unique Sprouted Pretzel Shells (highly recommended!) and juicy mango.

The Best Veggie Bagel Sandwich

Notes

Other veggies that would work well include cucumber, matchstick carrots, other peppers, and sprouts.

Ingredients

  • 1 multigrain bagel
  • 1 Tbsp roasted red pepper hummus (sub any hummus)
  • 2-3 leaves fresh basil, torn (sub mint, parsley, or dill)
  • Handful thinly sliced red bell pepper
  • ~1 Tbsp thinly sliced red onion
  • 1/2 oz feta, sliced (high quality)
  • 5g sun-dried tomato, sliced
  • 1-2 Greek olives, chopped (sub your favorite)
  • 1 tsp chopped marinated pimento (sub another pickled veggie)
  • 1/2 oz avocado, sliced
  • 1/4 tsp Everything But the Bagel seasoning
  • Handful baby spinach

Instructions

  1. If desired, thin the bagel with a bread knife. Lightly toast.
  2. Spread the hummus on one side of the bagel. Layer herbs, pepper and onion, feta, sun-dried tomato, olives, marinated pimento, avocado, seasoning, and spinach. Top with other bagel half. Slice and serve.
